Lawsome Gluten-Free Brownies

125g butter, melted
75g coconut oil, melted
3/4 cup golden caster sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
3 eggs, at room temperature
1 cup gluten-free self-raising flour
1/2 cup raw cacao powder
1/2 cup almond meal
100g Lindt dark chocolate
Line a slice pan with baking paper and preheat the oven to 160°C fan-forced.
In a large bowl, whisk together the butter, oil, sugars, and vanilla until well combined. Add the eggs and whisk again until smooth.
Sift in the flour and cacao powder, then add the almond meal. Stir until just combined.
Pour the mixture into the prepared pan and smooth the top. Press 80g of broken pieces of chocolate into the batter.
Bake for 25–30 minutes, or until the edges are slightly firm. Place pan onto cooling rack then with remaining chocolate, finely grate remaining chocolate over the warm brownie. Allow to cool in the pan on a wire rack. Slice into bite-sized pieces and enjoy!
